“Magic” Tomato Soup

This soup recipe is “magic” because the basic recipe is so easy and so delicious and very economical. However you can add others ingredients if you wish – garlic, basil, pasta, leftover vegetables, rice. Add lentils and harissa paste for a middle eastern twist. Whatever leftovers you have lurking in the fridge can be used. The only limit is your imagination!

Ingredients

  • 2 tins plum tomatoes
  • 2 large potatoes, peeled & chopped
  • 1 large onion, chopped
  • 2 vegetable stock cubes
  • 2 ½ pints water
  • Salt & Pepper to taste

Optional ingredients:

  • garlic
  • basil
  • pasta
  • leftover vegetables
  • rice
  • lentils
  • harissa paste

Method

Simmer all the ingredients together for 40 minutes. Then whizz – can be a smooth or chunky as you wish.

It is really worth giving this a try – a lovely big pot of home-made tomato soup for around £2.00. Enjoy it with some crusty bread or oatcakes.
